Fish and Chips

Ingredients

  For the chips:
650 g baking potatoes, peeled
1 tsp olive oil
1 medium egg, white only
  For the fish:
cod fillets, about 120 g each
4 tsp mayonnaise
50 g white breadcrumbs
1 tbsp Parmesan cheese, grated
1 tbsp fresh parsley, chopped
  salt and pepper, to taste

Method

Preparation time: ca. 45 min / Grade of difficulty: medium / Calories per portion: n/a

Heat the oven to 200°C.

Chips:
Cook the potatoes in boiling water for 5 minutes. Drain. Cut each potato into wedges.

Brush a nonstick baking tray with some of the oil.

Beat the egg white until frothy and then toss the chips in the egg white.

Spread wedges out on the baking tray and bake for 35 minutes, turning them over halfway through cooking.

Fish:
Lightly oil another nonstick baking tray and lay the fillets on the tray. Spread a teaspoon of the mayonnaise over each fillet.

Combine breadcrumbs, cheese, herbs and season to taste with salt and pepper. Spread evenly over the fish.

Bake the fish on the top shelf of the oven for the final 10-15 minutes of the chips’ cooking time.
