Farmers Omelette

Ingredients

eggs
70 g bacon, finely chopped
100 g Cheddar cheese, grated
1 small onion, finely chopped
1/2  capsicum, green, finely chopped
70 g mushrooms, thinly sliced
100 g mixed vegetables, cooked and diced
tomatoes, skinned and coarsely chopped
2 tbsp butter
70 ml milk
1 tsp mixed dried herbs
1 tsp salt
1/2 tsp pepper, grounded

Method

Preparation time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

Melt butter in a frying pan and sauté the onions, capsicum and bacon until the vegetables are soft.

Meanwhile beat the eggs, milk, herbs, salt and pepper together thoroughly.

Add the egg mixture to the pan and sprinkle with the cooked vegetables, chopped tomatoes and grated cheese.

Fry over medium heat until base is firm and the eggs are set.
