Green Tomato Rice
Delicious rice dish that goes well with pork or beef

Sauté bacon in some olive oil over medium heat. Cook until crisp and then remove from saucepan and discard. Keep the bacon drippings in the saucepan.
Sauté the green onions in the bacon drippings for 1 minute. Add green tomatoes and sauté for 1 minute longer. Add garlic and jalapeno pepper and sauté for another 30 seconds.
Add the chicken broth and rice and bring to a boil. Stir, reduce heat to low, cover, and simmer for 20 to 25 minutes, or until rice is tender and liquid is absorbed.
Stir in Parmesan cheese just before serving, if desired.
Suggestions: Instead of using bacon one can also youse minced pork or minced beef to make some dripping and instead of discarding it, keep it in the pan during the entire cooking process. That way a more intense meaty flavour will develop also with the remaining ingredients.
