Ingredients

500 g green tomatoes, sliced
1 1/2 tbsp butter
1 large shallot, minced
2 tsp flour
180 ml double cream
1 tsp salt
40 g Parmesan cheese, grated
1/8 tsp nutmeg
  For the gratin topping:
50 g finely grated bread, (panko)
1 tbsp olive oil
  salt, to taste

Method

Preparation time: ca. 20 min / Grade of difficulty: easy / Calories per portion: n/a

Preheat the oven 200°C.

Mix all the ingredients for the breadcrumb topping together and set aside.

Melt butter in a saucepan and sauté the shallots over medium heat until soft. Add the flour and stir for about 1 minute. Whisk in the cream, the cheese, salt and nutmeg. Continue whisking until the thickened. Remove from heat.

Dip the slices of green tomato into the cream and cheese mixture and arrange them in a small casserole dish (oven safe).

Spoon remaining sauce on top of the green tomatoes and sprinkle with the breadcrumb topping.

Bake for 10-15 minutes.
