Fried Cabbage
| 1 medium | onion, finely chopped |
| 6 tbsp | oil |
| 1 large | tomato |
| ½ tsp | curry powder or more |
| 1 tsp | salt |
| 1 medium | cabbage, shredded |
| 2 | carrots, cleaned and sliced |
| 1 | green capsicum, seeded and chopped |
| 125 ml | water |
Method
Over moderate heat, fry the onion in oil until lightly browned, stirring to prevent scorching.
Add tomatoes, curry powder and salt, continue to stir-fry for 3 minutes.
Add cabbage, carrots, capsicum and mix well.
Pour in about 125ml water. Cover the pot, reduce heat and simmer until the liquid is absorbed and the cabbage is still slightly crunchy.
