Marinated Plum Chicken Breast
| 600 g | chicken breast fillets, trimmed |
| 120 g | plum sauce |
| ½ tsp | Chinese five-spice powder |
| 2 tsp | ginger, finely grated |
| 2 clove(s) | garlic, sliced |
| 2 tbsp | vegetable oil |
| 2 tbsp | light soy sauce |
| 2 handful | sugar peas, blanched |
| soy sauce, to serve | |
| steamed rice, to serve |
Method
Place chicken, plum sauce, five-spices, ginger, garlic and oil in a bowl and toss to coat. Set aside for 20-30 minutes to marinate.
Preheat oven (170ºC, fan-forced). Bake chicken in a baking tray for about 30 to 40 minutes, turning twice until cooked through.
Slice the chicken and serve with steamed rice, peas and soy sauce.
Tip: Serve with Asian greens like bok choy
