Pasta Dough
| 250 g | semolina flour |
| 250 g | strong white flour |
| 4 medium | eggs |
| 1 pinch(es) | salt |
Method
Mix the flour and the salt in a bowl. Make a hole in the middle and add the eggs. Now circle with a fork from the middle working to the outside till flour and eggs are sticking.
Now work by hand and knead dough till it is firm and not sticking to the surface anymore. Let rest for 30 minutes under the bowl(to prevent from drying out). Then roll thinly and cut shapes or noodles.
Cook in boiling salt water for 4-6 minutes, depending on the thickness.
