Char Siu Pork Fried Rice

Ingredients

350 g pork fillet
70 g char siu sauce
1 tbsp vegetable oil
eggs, beaten
onion, chopped
rashers rindless bacon, chopped
250 g rice, basmati or jasmine
3 tbsp dark soy sauce
3 tbsp sweet chilli sauce
150 g corn kernals, canned, drained
100 g frozen peas
spring onions, chopped to serve
portions

Method

Preparation time: ca. 20 min / Grade of difficulty: easy / Calories per portion: n/a

Cook rice and cool.

Place pork in baking pan and coat well with the char siu sauce. Marinate for 30 minutes.

Preaheat oven (160ºC, fan-forced. Bake pork for 30 minutes, turning once. Cool, then slice.

Heat oil in a hot wok or heavy based pan. Add eggs, swirling over base until cooked like an omelette. Remove, roll and shred. Set aside.

In same wok, if necessary add more oil, stir-fry onion on high for 1-2 minutes. Add bacon and cook for 1 minute.

Stir in rice and sauces. Stir-fry for 2 minutes. Toss through pork, corn, peas and egg. Stir-fry for 1-2 minutes.

Serve topped with spring onions.

Hi frangipani,

what does this char siu sauce taste like exactly? I have never heard of it, to be honest. Can it be substituted by some other ingredients?
