White Chocolate Cheesecake

With brandy sauce

Ingredients

115 g white chocolate
250 g cream cheese
100 g white sugar
30 g flour
3 medium eggs
1 tsp vanilla
120 ml whipping cream
  For the brandy cream:
240 ml whipping cream
350 g white chocolate
60 ml brandy
portions

Method

Preparation time: ca. 20 min / Grade of difficulty: easy / Calories per portion: n/a

Preheat oven to 150°C. Grease a springform pan.

Combine cream cheese, sugar, and flour in a mixing bowl and cream until light and fluffy. Beat in eggs, one at a time, mixing well.

Melt the white chocolate in a bowl over simmering water. Add melted chocolate and vanila to the cream cheese mixture and beat with an electric mixer.

Pour mixture into the prepared springform pan. Place cheesecake pan in a water bath filled with warm water and bake for 50 to 60 minutes.

Cool at room temperature for 1 hour. Refrigerate until set before removing from pan.

Brandy Sauce:
Place cream in a saucepan and bring to a boil. Place chocolate in a double boiler and pour hot cream over chopped white chocolate. Stir with until melted. Add brandy and continue stirring until well blended.

To serve, pour sauce over chilled cheesecake.

Sounds delicious! How big must the pan be? 22 or 26 cm?

I used a 18 cm pan, as the amount of the dough is not that much.

The cake is excellent!!!! The taste just perfect!

I did not make the brandy sauce but I glazed the cake with apricot jam and then added some fruits.

Got lots of compliments and I send them on to you.

Simple! Heat apricot jam and brush the top of the cake with it, that helps the fruits to stick. Then just add berries or fruits to taste.
