White Chocolate Cheesecake
With brandy sauce

Method

Preheat oven to 150°C. Grease a springform pan.
Combine cream cheese, sugar, and flour in a mixing bowl and cream until light and fluffy. Beat in eggs, one at a time, mixing well.
Melt the white chocolate in a bowl over simmering water. Add melted chocolate and vanila to the cream cheese mixture and beat with an electric mixer.
Pour mixture into the prepared springform pan. Place cheesecake pan in a water bath filled with warm water and bake for 50 to 60 minutes.
Cool at room temperature for 1 hour. Refrigerate until set before removing from pan.
Brandy Sauce:
Place cream in a saucepan and bring to a boil. Place chocolate in a double boiler and pour hot cream over chopped white chocolate. Stir with until melted. Add brandy and continue stirring until well blended.
To serve, pour sauce over chilled cheesecake.
