Kohlrabi Potato Bake
| 600 g | kohlrabi, diced |
| 400 g | potatoes, peeled, diced |
| 300 g | ham, diced |
| 1 | green onion, chopped |
| 1 tbsp | fresh parsley, minced |
| ¼ tsp | paprika |
| ⅛ tsp | cayenne pepper |
| ½ tsp | dried thyme |
| ½ tsp | Worcestershire sauce |
| 6 medium | eggs, yolks and whites separated |
| 15 g | flour |
| 60 g | Cheddar cheese, grated |
| salt and pepper, to taste |
Method
Preheat oven to 150°C.
Cook potatoes until just tender, about 10 minutes. Steam kohlrabis until just tender, about 5 minutes.
Sauté the ham, green onion and herbs in oil for 2 minutes. Stir in the Worcestershire sauce.
In a large bowl, combine the kohlrabi, potatoes, ham and herb mixture.
In a separate bowl whisk together the egg yolks and the flour. Add to the kohlrabi mixture. Add in the cheese and season with salt and pepper to taste.
Beat the egg whites until stiff. Add to the kohlrabi mixture.
Spoon everything into a baking dish and bake for 40-50 minutes or until the top is golden.
