Minced Beef Curry with Coconut Milk

Ingredients

500 g minced beef
1 tbsp olive oil
1 medium onion, chopped
4 clove(s) garlic, minced
1/2  beef stock cube
2 tsp Worcestershire sauce
1 1/2 tsp curry powder
300 ml coconut milk

Method

Preparation time: ca. 30 min / Grade of difficulty: easy / Calories per portion: n/a

Heat oil in a medium hot pan and sauté onions until browned. Add the garlic and cook for about 1 minute. Remove onions and garlic from the pan and set aside.

Add mince to the pan and cook until browned. Once the mince is brown, turn up the heat and let it sit in the pan for about 3-4 minutes.

Pour the liquid from the meat in a bowl and add the stock cube and Worcestershire sauce. Keep to one side.

When mince is browner, lower the heat and add the curry powder. Cook for 1 minute. Add the stock liquid and mix together well.

Add the coconut milk and mix again. Cook for about 20 minutes, stirring frequently.

Serve with rice.
