Ingredients

chicken
1/8 tsp cinnamon, ground
1/8 tsp allspice, ground
1/8 tsp cloves, ground
1/8 tsp nutmeg
2 tsp salt
1 tsp sugar

Method

Preparation time: ca. 12 hrs 15 min / Grade of difficulty: easy / Calories per portion: n/a

Rinse chicken and pat dry.

Combine salt, sugar and spices and mix well. Coat chicken evenly with seasoning, sprinkling a little in cavity, and rubbing the rest into skin. Wrap chicken in plastic bag and refrigerate overnight.

Heat oven to 200°C.

Place the chicken in a roasting pan. After 15 minutes, reduce heat to 180°C and turn bird breast side up, and roast 15 minutes more. Reduce heat to 150°C and baste chicken with released juices. Cook for further 30 minutes.

Remove chicken from oven and let stand 15 minutes before carving.
