Ingredients

120 g butter
1 medium onion, chopped
1 kg carrots, peeled, grated
1 1/2 l vegetable broth
  crème fraîche or cooking cream
portions

Method

Preparation time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

Melt the butter and sauté onion until soft.

Add grated carrots and cook until carrots are tender, about 30 minutes.

Use a hand blender to puree the soup. Add the crème fraîche to the soup and stir to combine.
