Mashed Sweet Potato Casserole

Ingredients

1 kg sweet potatoes, peeled, cooked, mashed
200 g brown sugar
2 medium eggs, beaten
1 tsp vanilla
120 ml milk
120 g butter, melted
  For the topping:
100 g brown sugar
40 g flour
40 g butter, melted
120 g pecans, chopped
1 tbsp honey, optional

Method

Preparation time: ca. 45 min / Grade of difficulty: easy / Calories per portion: n/a

Cook potatoes until tender. Drain and mash with a fork.

Combine mashed potatoes with the sugar, beaten eggs, vanilla, milk and butter. Mix well and pour into a buttered casserole dish.

Mix topping ingredients together and sprinkle over top.

Preheat oven to 180°C.

Bake for 30-40 minutes, until hot and browned.

why does the sweet potato ingredients incl 200 grams of brown sugar when sugar is not mentioned in the mash potato directions?
