Ingredients

250 g potatoes, cooked, mashed
250 g carrots, grated
250 g sugar
230 g flour
250 g red currants
230 g raisins
230 g suet, finely chopped
25 g candied peel
2 medium eggs, beaten
  nutmeg, to taste
1 pinch(es) salt

Method

Preparation time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

Mix all of the ingredients together, except the eggs. When well combined, add the eggs and stir until smooth.

Pour the mixture into a buttered basin and cover with greaseproof paper and foil.

Place in a saucepan of boiling water and steam for about 4 hours, adding more water as it evaporates.

Turn out and serve hot with custard.
