Sabayon Sauce

Rich sauce over fruit or plain cake

Ingredients per portions

4 medium eggs, yolks only
100 g granulated sugar
120 ml sherry

Method

Whip the yolks well, then slowly whisk in the sugar. Blend in the sherry and place the bowl over steaming water. Cook, stirring constantly, until it thickens, about 7-10 minutes. Serve immediately.
