Rum Muffins
| 180 g | flour |
| 80 g | sugar |
| 4 tsp | baking powder |
| 20 g | cocoa powder |
| 30 g | shredded coconut |
| ½ tsp | salt |
| 80 g | raisins |
| 120 ml | brown rum |
| 2 medium | eggs, beaten |
| 240 ml | milk |
| 130 g | butter, melted |
Method
Soak the raisins in the with the rum for at least 2 hours.
Preheat the oven to 200°C and brus 18 muffin tins with oil on the bottoms.
Combine flour, cocoa, salt and baking powder in a bowl. Mix in 20 g of the coconut and sugar.
In another bowl mix the milk, eggs and melted butter. Stir in the rum and raisins.
Combine both mixtures, using a fork to mix the ingredients together. Spoon the mixture into muffin tins and sprinkle the tops with coconut.
Bake for approximately 15-20 minutes. Cool on wire rack.
