Vegetable Pâté
| 2 tsp | vegetable oil |
| 2 medium | onions, chopped |
| 115 g | mushrooms, chopped |
| 250 g | green beans, chopped |
| 30 g | fresh parsley, chopped |
| 2 tsp | sage |
| 200 g | tofu, squeezed to remove excess moisture |
| salt and pepper, to taste |
Method
Heat the oil in a medium. Sauté onions until softened, about 5 minutes. Add the mushrooms and beans and cook for about 5 minutes.
Transfer the mixture to a blender; add parsley, sage, salt and pepper and process unitl smooth.
Transfer the mixture to a medium bowl and add tofu to the mixture. Mix well, refrigerate, covered, until chilled, at least 2 hours.
