Ingredients

potatoes, peeled, chopped
1 large onion, chopped
1.2 l water
3 tbsp olive oil
4 medium eggs
  salt and pepper, to taste

Method

Preparation time: ca. 20 min / Grade of difficulty: easy / Calories per portion: n/a

Heat oil in a large pot over low heat and sauté onions until tender. Add water and chopped potatoes. Season with salt and pepper. Bring to a boil and then reduce heat to low. Simmer for 20 minutes or until potatoes are tender.

Remove from heat and crack eggs into soup. Place on low heat until whites of eggs are cooked. Cool slightly before serving.
