Tomato Potato Casserole
| 4 medium | potatoes, peeled, diced, cooked |
| 250 g | tomatoes, chopped, fresh or canned |
| 1 large | onion, chopped |
| ¼ tsp | basil |
| White Sauce: | |
| 60 g | butter, melted |
| 100 g | flour |
| ⅛ tsp | garlic powder |
| 1 tsp | onion powder |
| salt and pepper, to taste | |
| 120 ml | sour cream |
Method
Preheat oven to 180°C.
Cook potatoes until tender. Drain.
Sauté onion until slightly browned.
Melt butter in a sauce pan and stir in flour into melted butter. Season with garlic and onion powder and salt and pepper. Stir until sauce is creamy.
In a casserole dish, layer potatoes, tomatoes and onions. Sprinkle with basil and pour over sauce. Roast for 30 minutes.
