Ingredients

800 l pomegranate juice
1.2 kg caster sugar
2 large lemons, juiced
170 ml liquid pectin

Method

Preparation time: ca. 20 min / Grade of difficulty: easy / Calories per portion: n/a

Combine pomegranate juice, sugar and lemon juice in a large saucepan and bring to a boil. Add pectin and stir constantly. Cook until foam forms at the top. Skim off foam and remove from heat.

Fill liquid into jars. Seal and place into hot water for about 5 minutes.

You can use fresh juice or already bottled juice. I have only ever used bottled juice I bought in the supermarket. I suppose if the fruit is in season and you have the time and patience to actually juice the fruit yourself, the result is going to be a lot better. But nevertheless, it is an easy recipe and quickly done.
