Ingredients

120 g rice
500 ml low fat milk
1 tbsp vanilla extract
2 tbsp honey
80 ml low fat yogurt
  For the fruit sauce:
150 g mixed forest berry fruit
20 g granulated sugar
2 tbsp cornstarch
2 tbsp water
50 ml water

Method

Preparation time: ca. 20 min / Grade of difficulty: medium / Calories per portion: n/a

Rice:
Heat the milk in a pan. Add vanilla extract and when milk starts to boil then add the rice. Cook, stirring occasionally, until rice is tender.

Remove from heat and stir in the honey, then the yogurt. Stir well and let the mixture cool or chill it briefly in the refrigerator.

Sauce:
In a saucepan, bring berries, sugar and water to a boil over medium heat. Stir occasionally, reduce heat and simmer for 5 minutes.

Whisk cornstarch with 2 tbsp cold water and whisk into berry mixture. Cook until thickened, about 2 minutes.

Spoon rice portions on plates and pour sauce over the rice.
