Chocolate Beetroot Cake

Ingredients

40 g cocoa
130 g plain flour
1 1/2 tsp baking powder
1 pinch(es) salt
155 g caster sugar
200 ml corn oil (or similar)
1 1/2 tsp vanilla essence
3 medium eggs, beaten
250 g beetroot, pureed (ready-cooked 250g packs are fine)
115 g plain chocolate, broken into small pieces
portions

Method

Note: Thanks to the beetroot, this chocolate cake is very moist.

Preheat the oven to 375F/190°C/Gas 5 and grease a 7-inch (17.5cm) round cake tin.

Sift the cocoa, flour, baking powder and salt into a bowl and mix with the sugar.

Add the oil, vanilla essence, eggs, beetroot and chocolate pieces and mix well.

Pour into the cake tin, put on a baking tray and bake for 50 minutes, or until a skewer comes out clean.
