Chocolate Beetroot Cake
Ingredients
| 40 g | cocoa |
| 130 g | plain flour |
| 1 1/2 tsp | baking powder |
| 1 pinch(es) | salt |
| 155 g | caster sugar |
| 200 ml | corn oil (or similar) |
| 1 1/2 tsp | vanilla essence |
| 3 medium | eggs, beaten |
| 250 g | beetroot, pureed (ready-cooked 250g packs are fine) |
| 115 g | plain chocolate, broken into small pieces |
Method

Note: Thanks to the beetroot, this chocolate cake is very moist.
Preheat the oven to 375F/190°C/Gas 5 and grease a 7-inch (17.5cm) round cake tin.
Sift the cocoa, flour, baking powder and salt into a bowl and mix with the sugar.
Add the oil, vanilla essence, eggs, beetroot and chocolate pieces and mix well.
Pour into the cake tin, put on a baking tray and bake for 50 minutes, or until a skewer comes out clean.
