Red Currant Fool
| 700 g | red currants, stripped from stalks |
| 4 tbsp | icing sugar |
| 1 tbsp | vanilla extract |
| 200 ml | whipping cream |
| 200 ml | greek yogurt |
Method
Place two thirds of the fruit and two tablespoons of the sugar into a blender and process until well puréed.
Whip the cream, add vanilla extract and remaining sugar and mix until stiff.
Add yogurt and then the purée. Fold in the remaining fruit and toss well.
Spoon the mousse into chilled glasses and chill until ready to serve.
