Red Currant Muffins
| 150 g | flour |
| 100 g | sugar |
| 2 tsp | baking powder |
| ½ tsp | salt |
| 1 medium | egg, beaten |
| 120 ml | milk |
| 50 ml | vegetable oil |
| 300 g | red currants |
| ½ tsp | cinnamon |
Method
Preheat oven to 200°C.
Combine flour, sugar, baking powder, cinnamon and salt in a large bowl and make a well in centre of mixture.
Combine egg, milk and oil and add liquid mixture to dry ingredients. Stir until well combined. Gently stir in red currants.
Spoon into greased muffin pans filling 2/3 full and bake at for 20 to 25 min.

It would certainly make a loaf-cake - but you would need to increase the quantitiy a little - or it would not fill a loaf tin. You would also need to cook it for longer in order for it to be cooked through - and may need to cover the top so it doesn't burn or scorch before its ready.
