Baked Chicken

Ingredients

2 kg chicken: breasts, thighs, legs, wings
120 ml chicken broth
60 ml white wine
  olive oil
  salt and pepper, to taste
  flour, if desired

Method

Preparation time: ca. 30 min / Grade of difficulty: easy / Calories per portion: n/a

Preheat oven to 200°C. Coat a roasting pan with olive oil.

Rub olive oil over all of the washed and dried chicken pieces and place in the roasting pan. Sprinkle with salt and freshly ground black pepper.

Cook for 30 minutes at 200°C. Then lower the heat to 150°C and cook for 10 minutes more.

Remove chicken pieces from roasting pan, cover with aluminum foil and let rest for 5 to 10 minutes before serving.

Gravy:
Pour the drippings in a saucepan and add white wine and chicken stock. Bring to a boil and cook, whilst stirring continuously, until thickened. Add a bit of flour, if desired.

Serve with steamed rice or mashed potatoes. Pour over gravy.
