Spicy Red Capsicum Sauce

Ingredients

onion, finely chopped
1 tbsp olive oil
capsicum, red, finely diced
2 clove(s) garlic, finely chopped
2 tbsp tomato paste
1 tsp vinegar, red wine
1/2 tbsp flour
250 ml chicken stock
 some sea salt
 some black pepper, freshly grounded
 some paprika powder
 some chili powder
3 tbsp gherkins, finely chopped

Method

Preparation time: ca. 30 min / Grade of difficulty: easy / Calories per portion: n/a

Sauté onion in olive oil until it starts to become golden brown.

Add capsicum, garlic, tomato paste and vinegar and stir-fry for about 30 seconds.

Add flour, stir and pour in the stock.

Simmer for about 20 minutes, stir from time to time.

Finally add the gherkins.

This sauce goes very well with pork schnitzel, rissoles, chips or rice.
