Cinnamon Sauce for Banana Fritters
| 300 ml | water |
| 2 tbsp | cinnamon, ground |
| 3 medium | eggs, ground |
| 130 g | sugar |
| 2 tbsp | cornstarch |
| 230 g | butter |
Method
Heat water and cinnamon in a medium saucepan. Stir well.
In a separate bowl, mix the egg yolks with sugar and cornstarch. Stir to combine well.
Combine both mixtures and bring sauce to a boil. Remove from heat and leave to cool for 2 minutes. Slowly whisk or beat in the butter.
Store sauce in refrigerator.
