Onion, Black Olive and Caper Compote
| 120 ml | olive oil |
| 2 medium | onions, sliced thinly |
| 6 clove(s) | garlic, sliced thinly |
| 90 g | olives, pitted |
| 50 g | capers |
| 2 | anchovy fillets, minced |
| 60 ml | balsamic vinegar |
| 1 tsp | fresh marjoram, minced |
| 2 tbsp | fresh parsley, minced |
| salt and pepper, to taste |
Method
Heat two tablespoons oil in a pan. Add onions and sauté over low heat until softened, about 5 minutes. Add garlic and sauté for 1 minute longer.
Turn onion mixture into a bowl and stir in remaining ingredients.
