Californian Summer Salad


Ingredients per portions

  For the Dressing:
230 ml yogurt
2 tbsp orange juice concentrate
2 tbsp fresh basil, chopped
1 tbsp honey
  For the Salad:
  iceberg lettuce
apricots, halved, pits removed
200 g strawberries, halved
canaloupe melon, seeded, sliced, rind removed


Method

For the dressing combine yogurt, orange juice concentrate, basil and honey. Whisk well.

On individual serving plates arrange lettuce and fruits. Serve dressing on the side.
