Ingredients

  Peaches:
4 medium peaches, cut in half, stone removed
2 tbsp butter, unsalted
2 tbsp brown sugar
240 ml vanilla ice cream
  For the cherry sauce:
500 g dark cherries, pitted
1 tbsp sugar
120 ml dry red wine
1 tsp balsamic vinegar
1 tsp cherry liqueur

Method

Cherry sauce:
Combine cherries, sugar, red wine, and balsamic vinegar. Bring to a simmer and cook, until the fruit is soft, 6 to 8 minutes. Stir occasionally.

Transfer the mixture to a blender and purée until completely smooth.

Return the mixture to the pan and add the cherry liqueur. Simmer until reduced to about 60 ml, about 2 minutes.

Peaches:
Place the halves in a medium bowl.

Combine butter and brown sugar in a small saucepan over low heat and bring to a simmer. Stir until butter has melted and sugar has dissolved.

Coat the peaches with the butter mixture and grill the peaches until the peaches are soft, 10 to 12 minutes, turning once while grilling.

To serve layer each serving dish with 2 peach halves, 1 scoop ice cream, and 1 tablespoon cherry sauce.
