Ingredients

trouts, heads removed, boned
4 tbsp butter
2 tbsp Pernod
2 tbsp olive oil
1 tbsp parsley, chopped
1 small shallot, chopped
  salt and pepper, to taste

Method

Preparation time: ca. 30 min / Grade of difficulty: easy / Calories per portion: n/a

Sprinkle the fish on both sides with the salt and pepper and the Pernod. Cover and let stand at room temperature for about 30 minutes.

Mix together shallot, butter, oil, parsley and a bit of pepper and process in a blender until well combined.

Preheat grill.

Stuff trout with olive mixture and fold closed with a toothpick. Place trout on the grill and cook on each side for about 8 minutes.
