Barbecued Beef
| 2 kg | bolar beef |
| For the marinade: | |
| 2 medium | onions, finely chopped |
| 2 clove(s) | garlic, crushed |
| 2 tbsp | white wine vinegar |
| ½ tsp | paprika powder |
| 50 g | parsley, finely chopped |
| olive oil | |
| salt and pepper, to taste |
Method
Place the beef in a dish.
For the marinade mix together the onion, garlic, white wine vinegar, paprika and parsley. Add enough oil to make the marinade moist and season well with salt and pepper. Rub this mixture over the beef and marinate overnight.
To cook place beef onto a BBQ tray and put on the barbecue over hot coals. Cover and cook for 2 1/2 hours, brushing the beef with more marinade as it cooks.
Remove beef from the barbecue when ready, cover with foil and leave to rest for 10 minutes before carving.
