Ingredients

100 g flour
300 ml milk
1 medium egg
1 pinch(es) salt
1 tsp sugar
  butter for frying
portions

Method

Preparation time: ca. 20 min / Grade of difficulty: easy / Calories per portion: n/a

Whisk together flour and salt to combine.

In a separate bowl, combine the egg, sugar and milk and whisk until well mixed. Add egg and milk mixture to flour mixture and beat until smooth. The batter should be thin.

Heat a griddle for two minutes. Add a bit of butter and then add a ladle of the batter.

Cook for 30 seconds and when it is golden brown, quickly flip the blini and cook for 15-30 seconds more on the other side as well. Traditionally a blini is made very thin.

Place the blini onto a warm plate, top with a thin layer of a desired filling, roll or fold up, and serve immediately.
