Ingredients

  polenta, see database
1/4 tsp olive oil
2 medium plum tomatoes
100 g Brie cheese, sliced
16 leaves basil
  toothpicks
portions

Method

Preparation time: ca. 20 min / Grade of difficulty: medium / Calories per portion: n/a

Preheat oven to 180°C. Slice polenta into slices about 1 cm thick.

Heat oil in a nonstick skillet over medium high heat. Sauté polenta slices for about 2-4 minutes on each side until light brown. Remove to paper towel to drain.

Place tomato slices, Brie slices, and basil leaves on one polenta slice and then top with a second one. Secure with wooden toothpicks to keep sandwich together.

Place on baking sheet and bake for 7-8 minutes until cheese melts and sandwiches are hot.
