Spaghetti Carbonara

Ingredients per portions

200 g spaghetti
200 ml cream
50 g Parmesan cheese, freshly grated
3 medium eggs, yolks only
100 g bacon, diced
1 medium white onion
 some butter
  pepper and salt, to taste

Method

Slice the onion very finely. Melt butter in a frying pan and fry the bacon with the onion.

Cook the Spaghetti.

Mix the egg yolk with the cream and Parmesan cheese. Then add the bacon and onion to this mixture.

Drain the Spaghetti and place them on a warm plate. Add the sauce and stir it for about 1 minute.

Season to taste with salt and pepper.

I added a teaspoon of red wine vinegar and used double cream and 2 eggs, and added 2 minced garlic cloves. My husband really loved this recipe as he wasn't keen on eating Carbonara, and the kids loved it too :0)
