Ingredients

1 tbsp vegetable oil
500 g meaty soup bones
2 tbsp flour
2 medium onions, finely chopped
1 1/2 l water with beef stock
3 tsp curry powder, optional
1 small bay leaf
2 small carrots, finely chopped
2 large potatoes, peeled and diced
300 g cherry tomatoes, diced
  salt and pepper, to taste

Method

Preparation time: ca. 30 min / Grade of difficulty: medium / Calories per portion: n/a

Heat oil in a large saucepan over medium heat.

Add chopped onions to the saucepan. Toss soup bones with flour and add to pan. Season with salt and pepper. Brown beef and onions, stirring frequently.

Add beef broth and bring to a boil; reduce heat to low and simmer for 1 hour.

Add curry powder and bay leaf. Simmer for further 30 minutes.

Remove meat from bones, dice meat into small chunks and discard bones.

Return beef to the broth and add chopped carrots, potatoes and tomatoes. Cover the pan and simmer for another 45 minutes. Adjust seasonings.

Serving suggestion: Serve soup with crusty bread and a tossed green salad.
