Ingredients

700 g apples
100 ml lemon juice, freshly squeezed
375 g flour
225 g sugar
eggs
250 g skimmed curd
25 g semolina
100 g marzipan
2 tbsp powdered suger or icing sugar
50 g almonds, chopped or crushed
portions

Method

Preparation time: ca. 20 min / Grade of difficulty: medium / Calories per portion: n/a

Peel the apples and cut them into cubes. Steam for 3 minutes in the lemon juice.

Making the streusel dough:
For the streusel dough mix together the flour and 175g sugar. Keep 2 tablespoons of flour for later.

Melt the butter and add it to the flour mixture. Mix it with a dough hook. Now add the 2 tablespoons of flour over the streusels and whisk well.

Making the curd egg mixture:
Separate the egg whites from the yolks and set aside the yolks. Beat the whites until stiff, and then slowly add 1 tablespoon of sugar. Whisk again.

In another bowl mix together the egg yolks, the curd, rest of the sugar and semolina. Stir well until smooth. Fold in the mixture of the beaten egg whites.

Making the apple marzipan mixture:
Drain the apples. Dice the raw marzipan into cubes and mix with apples.

Grease a spring form and fill in half of the streusel dough. Press in firmly by hand.

Then fill in the apple marzipan mixture.

Pour curd mixture on top.

Mix the rest of the streusel dough with the almonds and sprinkle on top.

Preheat oven to 200°C.

Bake for 50 minutes. Leave to cool and then sprinkle with powdered sugar or icing sugar if desired.

The cake sounds delicious but the butter seems to be missing from the ingredients list.
I would use the same weight as that for the sugar, ie 225 g

Would I be correct?

I'm from the middle east but live in the United States and don't exactly know what skimmed curd is. Can you please clarify? Thank you.
