Zucchini Potato Soup

Ingredients

500 g zucchini, grated
1 medium onion, finely chopped
1 tbsp butter
200 g potatoes, grated
500 ml chicken or vegetable broth
240 ml water
1 pinch(es) fresh basil and thyme
portions

Method

Preparation time: ca. 15 min / Grade of difficulty: easy / Calories per portion: n/a

Put the butter in a large casserole or pan. Fry the onions, covered, on high heat for 2-3 minutes. Add potatoes and herbs. Cover and cook on high heat for 6-8 minutes. Add zucchini, and cook on high heat for 4-6 minutes. Stir after each addition.

Puree everyhting in a blender until smooth.

Return to casserole with broth. Cover and cook on high heat for 10 minutes. Stir once and bring to the boil. Then add the milk and season with salt and pepper.

Serve hot or cold.

Well Alexia the soup is almost ready and I just have to warm it again tomorrow evening before serving, but I´m a bit irretated now. Under ingredients you mentioned 240ml water but later you add milk to it. Can´t find the milk anywhere. Foto will be uploaded later.

HI Kiezkicker,
it should be milk and not water. Have to change that.
Sour cream or single cream could also work, depending on how fattening/rich you prefer soup in general.

Thanks, used about 100g of creme fraiche and also some prawns as well.
