Pumpkin Soup

Easy and yummy

Ingredients

800 g 'Hokaido' pumpkin
1 l vegetable stock
250 g cream
 some dill,fresh or dried
portions

Method

Preparation time: ca. 10 min / Grade of difficulty: easy / Calories per portion: n/a

Wash the pumpkin and cut into pieces. Put in pot with water and vegetable stock and bring to the boil.

Cook the pumpkin in the stock until the pumpkin pieces are soft. Puree with a hand mixer, add the cream and the dill.

Season to taste with salt and pepper.

I think I've forgotten one step in this recipe: You have to boil the pumpkin in the stock until the pumpkin pieces are soft. Only then you can puree it.

trying this in Denmark on Sunday. I had a look this morning or last night... I'm certain some sausage (Spanish type i believe) was part of the recipe..
