Shrimp Curry
| 400 g | fresh shrimp, cooked, or defrosted from a pack |
| 1 large | onion, finely chopped |
| 1 tbsp | olive oil |
| 2 tbsp | curry paste |
| 400 g | natural yoghurt |
| coriander, chopped, to serve |
Method
Fry the onion until soft. Add the curry paste and yoghurt and let simmer for about 5 minutes.
Add the shrimp and simmer for further 2 to 3 minutes. Stir occasionally.
Serving suggestion: Serve over boiled rice and sprinkle the coriander leaves on top.
