Orange Lamb Chops
| 4 | leg lamb chops |
| 100 ml | wine vinegar |
| 60 ml | lamb stock |
| 50 g | butter |
| 5 tbsp | marmelade |
| 4 slice(s) | of 1 orange for garnish |
| ½ tsp | paprika |
| salt and pepper, to taste |
Method
Melt the butter in a heavy based frying pan and sauté the chops until lightly golden brown. Put a lid on whilst cooking the chops. Then sprinkle with paprika and season with salt and pepper. Add the stock and vinegar. Spoon a tablespoon of marmalade over each the of chops.
Cover and let simmer for 35-40 minutes. Add extra stock if needed.
Garnish with a slice of orange on each the of chops.
Serving suggestion: Serve with potatoes and vegetables.
