Sauce Hollandaise with Lime

Ingredients

6 medium eggs, yolks only
1 1/2 tbsp hot water
500 ml butter, melted
2 tbsp lime juice
1 pinch(es) salt and freshly ground pepper, to taste

Method

Combine egg yolks and hot water in a bowl and thicken over simmering water, stirring constantly.

When smooth, remove from heat. Gradually add warm clarified butter, whisking constantly. Add lime juice and season with salt and pepper.
