Marinated Duck Breasts with Coconut - Peanut Sauce

Mix the marinade ingredients and add the duck breasts. Marinade for 2 hours or overnight in the fridge.

Ingredients

  For the marinade:
2 tsp lemongrass, centre part finely chopped
2 clove(s) garlic, finely chopped
shallots, finely chopped
3 tsp soy sauce
1 tsp freshly ground black pepper
2 tsp fish sauce
3 tbsp coconut milk
  For the sauce:
125 ml water
1 tbsp fish sauce
1 tbsp white vinegar
1/2 tsp sugar
3 tbsp peanuts, roasted and ground
4 tbsp coconut milk
 some salt

Method

Mix the marinade ingredients and add the duck breasts. Marinade for 2 hours or overnight in the fridge.

For the sauce mix water, fish sauce, vinegar and sugar and bring to the boil. Simmer for 5 minutes, remove from the heat and set aside.

Remove breasts from the marinade and arrange on a rack in a roasting tin. Roast in a preheated oven at 180șC for about 20 minutes, turning once. Brown under a hot grill for about 2 minutes.

Reheat the sauce and bring to the boil. Add the ground peanuts and cook, stirring, for 1 minute. Add the coconut milk, season to taste, and simmer for 2 minutes.

Cut each duck breast diagonally into slices and serve with the sauce immediately.
