BBQ Prawn Skewers with Lemon Grass

Ingredients per portions

20  green king prawns, peeled, deveined, tails intact
1 tbsp lemongrass, centre finely chopped
2 leaves kaffir lime, finely chopped
1 tsp palm sugar
2 clove(s) garlic, finely chopped
1 tsp fresh ginger, grated

Method

Combine prawns, lemongrass, lime leaves, sugar, garlic and ginger.
Cover and place in the fridge for 3 hours.

Soak 20 bamboo skewers in water for about 20 minutes.

Thread the prawns, tail-end first, onto bamboo skewers and cook on the grill for about 1 minute each side or until they change colour.

Serve e. g. with mango mayonnaise.
