BBQ Prawn Skewers with Lemon Grass

green king prawns, peeled, deveined, tails intact |
| 1 |
lemongrass, centre finely chopped |
| 2 |
kaffir lime, finely chopped |

palm sugar |
| 2 |
garlic, finely chopped |
| 1 |
fresh ginger, grated |
Method
Combine prawns, lemongrass, lime leaves, sugar, garlic and ginger.
Cover and place in the fridge for 3 hours.
Soak 20 bamboo skewers in water for about 20 minutes.
Thread the prawns, tail-end first, onto bamboo skewers and cook on the grill for about 1 minute each side or until they change colour.
Serve e. g. with mango mayonnaise.
