Ingredients

300 g bread crumbs
60 g flour
90 g sugar, castor
60 g rice flour
1/2 tbsp baking powder
1 medium egg, beaten
1 pinch(es) salt
 some milk
  juice of 1 lemon
  rind of lemon, grated

Method

Preparation time: ca. 15 min Resting time: ca. 3 hrs / Grade of difficulty: easy / Calories per portion: n/a

Grate the rind off the lemon and place it on to the top of the sugar. Mix the sugar with the rind until roughly blended.

In a bowl mix flours, breadcrumbs, baking powder and salt. Make a well in the centre. Add the lemon juice and egg, and enough milk to make a smooth and soft consistency.

Pour the mixture into a greased mould, cover with a lid or with greased paper, and steam for 2 to 3 hours.

Turn out and serve with custard or lemon sauce.
