Ingredients

2 medium eggs
2 tbsp vanilla yoghurt
1 tbsp oil
1 tbsp brown sugar
450 g asserted seasonal fruit: (strawberries, blueberries, peaches, or any fruit you like)
1 tbsp milk
  salt and pepper to taste

Method

Preparation time: ca. 10 min / Grade of difficulty: easy / Calories per portion: n/a

Combine eggs, milk, salt and pepper in a large bowl. Beat with a fork very quickly but do not let it get frothy.

Heat oil on medium heat in a medium sized pan. Pour egg mixture into pan and cook until edges are golden brown.

Use spatula to separate omelette into quarters and turn one quarter at a time. Cook on other side until golden.

Place each quarter on a serving plate and drop a spoonful of yogurt and some fruit in the centre of each quarter. Sprinkle with brown sugar.
