Ingredients

ripe but firm avocados
4 tbsp black or red caviar
2 medium eggs, hard boiled
4 tbsp fresh lemon juice
2 dollop(s) sour cream

Method

Preparation time: ca. 20 min / Grade of difficulty: medium / Calories per portion: n/a

Pit the avocados by cutting it lengthwise all the way around and gently twist the two halves apart. With a knife twist gently around the pit to release the pit from the flesh.

Scoop out some of the avocado flesh. Blend the scooped out avocado flesh together with the lemon juice in a blender and set aside.

Put two tablespoons of black or red caviar in each avocaco half.

Add chopped hard boiled eggs on top of the caviar and top with a dollop of sour cream and the avocado lemon mix.
