Ingredients

  For the Filling:
200 g orange marmelade
200 g hazelnuts, chopped
200 g marzipan
  For the dough:
250 g flour
40 g sugar
4 tbsp vanilla sugar
1 pinch(es) salt
150 g thick sour cream or crème fraiche
100 g butter
eggs
3 tbsp milk
  coloured sugar crystals for sprinkling

Method

Mix flour, sugar, vanilla sugar, salt, sour cream and butter with a dough hook to a homogenous dough. Flour your work surface and knead into a smooth dough with your hands.

To make the filling, combine the hazelnuts and marmalade in a bowl. Grate the marzipan into the bowl and mix well.

Roll the dough out on a floured work surface and cut out cookies Ø 6cm – makes approximately 74 cookies.

Whisk the egg-white a bit and use to brush the edges of the cookies. Place a teaspoon of the filling in the middle and place a second cookie on top. Press down the edges with a fork.

Mix the yolk with the milk and brush cookies with the mixture. Sprinkle with the sugar crystals and bake for 15 minutes at 180°C.
