BBQ Chicken and Chorizo Skewers
| 600 g | chicken thigh fillets, 2cm pieces |
| 1 tbsp | chilli oil |
| 3 clove(s) | garlic, finely chopped |
| 2 tbsp | mild paprika |
| 1 tbsp | fresh lemon juice |
| 1 tsp | dried oregano |
| 2 tsp | brown sugar |
| 1 tsp | dried thyme |
| 4 | chorizo sausages, thinly sliced diagonally |
Method
Soak 16 bamboo skewers in water for about 30 minutes.
Combine oil, garlic, paprika, lemon juice, oregano, sugar and thyme. Add chicken pieces and mix well. Place covered in the fridge for about 2 hours.
Thread chicken pieces and chorizo onto the skewers and grill, turning, for about 7 minutes or until chicken is cooked through.
